ABSTRACT

 

                The proteic sediment (break) is a by-product that results from wort clarification, which, at present is not capitalized in our country, being evacuated in wastewaters.

This paper proposes a quality evaluation of obtained break from two beer factories and also its usage, because of its high content in protein and mineral substances, in manufacturing recipes of pets� (cats, dogs) food.
